Nothing better than a carrot made even sweeter by roasting! Recipe adapted from Let’s Dish Recipes.
1 pound carrots, cut into 1″ pieces
1/4 cup honey
1/4 cup olive oil
1-2 teaspoons fresh grated ginger
1 tablespoon soy sauce
1 clove garlic, minced
1 tablespoon brown sugar
Salt & pepper, to taste
Sesame seeds, for garnish (optional)
Preheat your oven to 400 degrees. Line a rimmed baking sheet with foil and then oil it. In a bowl, whisk together honey & brown sugar, olive oil, minced ginger, soy sauce, garlic, and salt & pepper. Pour this glaze over the carrot chunks, either in a large bowl or right on the baking sheet. Gently toss to cover carrots evenly. Bake for about 20 minutes, stirring them halfway, until the carrots are fork tender and a bit caramelized. Cooking times may vary with ovens, so keep an eye on them. Serve sprinkled with sesame seeds, if you wish.
