During the heart of cucumber season, we recommend taking advantage of their lovely cooling effect. We have been enjoying making a couple glasses of cucumber water to take out to the fields with us, so I thought I’d share the general recipe.
In a glass quart jar, mix:
Almost 1 quart water
Half a cucumber, sliced to ¼ inch rounds
1/8 tsp sea salt
Splash lime juice
Honey, to taste
Sprig of Oregano, Mint or Basil, chopped roughly
Stir all these ingredients together and let them steep for 15 minutes before you enjoy it. You could easily play around with substitutions, depending on what you have on hand; For these hot days, make a gallon or juice pitcher worth to keep in the refrigerator.
