The sweetness of Sun Gold tomatoes combines wonderfully with salty feta in this easy meal. We’ll see if your Sun Gold tomatoes actually make it until then! Farmer candy, we call them.
1 pint ripe Sun Golds, sliced in half
4 oz Feta, cut into 1/4 inch cubes
1/2 medium onion, diced finely
1/4 bunch of parsley, greens chopped finely
4 cups cooked quinoa (or rice or pasta), allowed to cool
Salt and fresh ground pepper, to taste
Splash lemon juice
Splash Olive Oil
Cook the grain of your choice and allow it to cool. Combine Sun Golds, feta, onion, and parsley in a bowl, fold in cooked quinoa/rice/pasta. Season to taste with lemon juice, olive oil, and salt & pepper.
