Delicata squash is, as its name implies, delicate. There is no need to peel the skin – you can eat it right along with the rest of the inside. I’d recommend increasing this recipe to justify having the oven on.
1 delicata squash
1/8C butter or ghee
1 Tbsp fresh sage, minced
Salt and pepper, to taste
Preheat oven to 350 degrees. Cut squash in half and scoop out the seeds. Slice into half rings and place in a baking dish. Dot with butter or ghee and sprinkle sage leaves and salt over the top. Bake for 45 minutes to an hour, or until squash is tender.
