Tacos can be a quick and refreshing meal during the summer; we enjoy making various radish salads for our tacos, before salsa season arrives.
½ – 1 bunch Cincinnati Market radishes, thinly sliced (reserve greens for cooking, if you’d like)
1 – 2 carrots, thinly sliced half-moons to match radishes
1 garlic scape, finely sliced
4-5 springs of cilantro, chopped finely
Juice (and pulp) of one citrus fruit (grapefruit, orange, etc) OR tsp of lime juice OR tsp vinegar
Salt and fresh ground pepper, to taste
Combine all ingredients in a small bowl and serve as a condiment for your meat or bean tacos. Also recommended would be sliced lettuce, grated cheddar cheese, plain yogurt (or sour cream), and hot sauce.
